Recipe 120- Nadine's incredible butter

This is so great! You can prepare it and use it any time you have a freshly baked bread, a baked potato or grilled meat.

Ingredients

1 cup butter melted
1 clove garlic chopped
1/2 cup parsley chopped
2 teaspoons lemon juice
1 teaspoon salt
fresh ground pepper to taste

In a bowl mix all the ingredients together. Pour the mixture into a small bowl and refrigerate for 2 hours. Ready and delicious!

Recipe 119- Delicious onion and semolina pie

This is an incredible recipe. Real quick and delicious.

Ingredients

1 kg green fresh onions chopped
500 gr semolina
1 cup feta cheese shredded
2 tablespoons olive oil
1 teaspoon salt
2 cups water

Preheat the oven to 450 F (230C).
In a bowl mix together the onions, semolina, salt, oil. Gradually add the water until you have a smooth dough.
Grease a large baking pan and pour in the mixture. Sprinkle with the cheese and bake for 20 min or until golden brown.

Recipe 118- Greek SOUVLAKI

This is originally made with pork on an upright spit. But this is extremely difficult to have in a house kitchen. So we are going to replace it with grilled pork stripes.

Ingredients

500 gr pork cut in stripes
1 tomato chopped
1 onion chopped
2 cups tzatziki (see recipe 71)
12 pitta bread (see recipe 10 )
2 tablespoons olive oil

Heat the oil in a pan over medium high temperature. Put the pork and cook for 30 min until it is well done.
Meanwhile prepare the tzatziki. The pitta bread is better to have it ready from the previous day, but you need to fry them again just for 1 min (30 sec each side).
When everything is ready place a pitta on a plate. Spread some tzatziki, add some pieces of tomato and onion and several pieces of pork stripes. Roll the pitta so that all ingredients stay inside. Looks great? Wait until you taste it!

Recipe 117- Greek pita bread

Good morning!
This is the first step to GREEK SOUVLAKI.

Ingredients

3 cups flour
1 cup warm water
1 teaspoon dry yeast
2 teaspoons salt
2 teaspoons sugar
4 tablespoons olive oil
1 tablespoon vegetable oil for frying

In a big bowl mix together the water, sugar and yeast. Add the salt and gradually add the flour and oil.
Knead well until you have a smooth dough.
Make 12 small balls and cover with plastic wrap. Let rise for 1 hour. Take each ball and punch it down stretching it from the center outwards. You should have a round flat pitta.
Preheat the oil in a pan and fry each pitta for 1 min each side, or until slightly brown.
They are ready to use.

Recipe 116- Delicious glazed salmon


 

Hello. This is another fantastic way to cook salmon!

Ingredients

  • 6 (5 ounce) salmon fillets
  • 4 cloves garlic, minced
  • 1 tablespoon white wine
  • 1 tablespoon honey
  • 1/3 cup balsamic vinegar
  • 4 teaspoons Dijon mustard
  • salt and pepper to taste
  • 1 tablespoon chopped fresh oregano

Directions

Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
  1. Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.
  2. Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.
  3. Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

    Recipe 115- Beef Fillet with a special sauce


    • This is a great way to enjoy a beef fillet.

    Ingredients

    4 beef fillets
    3 cups milk cream
    1 cup blue cheese cut into cubes
    1 cup feta cheese cut into cubes
    1 teaspoon salt
    2 teaspoons pepper
    4 slices of bacon
    1 onion chopped
    2 tablespoons olive oil
    1 teaspoon butter

    Preheat the oil in a pan over medium high temperature. Add the onion and bacon. Cook for 3 min, then stir in the cream. Bring to boil. Reduce heat to sim and allow to cook for 10 min. Add the cheese and  mix well until the sauce is smooth. 
    Meanwhile cook the beef. Use a grill pan (with stripes). 
    Preheat the pan with the butter. Place the fillets and cook over medium temperature for 5 min. Turn and cook for another 5 min. Season with salt and pepper.
    Serve each fillet in a plate and pour the hot sauce on top.

    Recipe 114- Fried cheese sticks

    Hello. Ready for lots of calories?

    Ingredients

    500 gr metsovone cheese shredded (this is a fantastic greek cheese, you can you edam or emmental instead)
    2 cups flour
    1 egg beaten
    salt/pepper to taste
    olive oil for frying

    In a big bowl mix together the cheese, the egg, 1 cup of flour, salt and pepper. Form into small sticks of dough and roll them over the other cup of flour.
    Preheat the oil in a deep pan over medium high temperature and fry the cheese sticks until golden brown (about 5 min). Great taste!

    Recipe 113- Soutzoukakia me safran (kadin budu)

    Good morning!
    This is an amazing recipe.

    Ingredients

    500 gr minced beef
    1 cup rice
    1/2 cup feta cheese shredded
    2 onions chopped
    1 tablespoon parsley chopped
    salt/pepper to taste
    1 tablespoon safran powder
    2 eggs
    2 tablespoons corn flour
    olive oil for frying

    Mix together the beef, onion, parsley, feta and rice. Take small portions of the mixture and form each one into torpedo shape.
    In a large pan boil 3 lt of water with the safran and place the soutzoukakia inside carefully for 5 min.
    Beat the eggs with the flour and roll the soutzoukakia one by one in the mixture.
    Preheat the oil in a deep pan over medium temperature and fry the soutzoukakia for 10 min.
    Yummy!

    Recipe 112- Nadine's chicken fillet

    Hi.
    Today we are cooking chicken, this time with a special sauce of mine.

    Ingredients

    4 chicken breasts
    1 onion chopped
    2 cups white wine
    1/2 cup olive oil
    2 cups milk cream
    salt/pepper to taste

    In a pan, preheat the oil over medium temperature. Put the chicken and onion. Allow to cook for 5 min then add the wine and reduce the temperature to sim. Allow to cook for 20 min. Pour in the milk cream, salt and pepper and bring to boil again. Cook for another 5 min. Serve hot!

    Recipe 111- Baked potatoes with cheese and cream

    Good morning.
    This is incredible and so easy to make!

    Ingredients

    5 potatoes boiled and cut in pieces
    1 cup milk cream
    2 cups metsovone cheese (this is a greek cheese, you can use any cheese you like) shredded
    1 cup mushrooms
    1 egg beaten
    salt/pepper to taste

    Preheat the oven to 355 F (180C).
    In a baking pan place the potatoes and arrange them at the bottom. Add the cheese and mushrooms. Pour in the cream and the egg. Add salt and pepper and bake for 30 min.

    Recipe 110- Loukoumades

    2 cups flour
    1 cup milk warm
    1/2 cup water warm
    1 teaspoon dry yeast
    1 teaspoon sugar
    1/4 teaspoon salt
    2 eggs beaten
    vegetable oil for frying
    honey and cinnamon for topping
    
    
    
    
    
    
    In a large bowl put the water, milk and dissolve the yeast. Add the eggs, sugar and salt. Gradually stir in the flour until you have a watery dough.
    Preheat the oil in a deep pan over medium high temperature and deep fry the loukoumades. How?
    With a big spoon take some dough and pour it in the oil. It will form a small ball. Do the same until all the dough is finished. You should have around 20 loukoumades.
    Fry them until golden brown. Place them in a kitchen paper to drain the excess oil and serve them in a plate while hot with lots of honey and cinnamon on top.

    Recipe 109- Easy coconut cookies

    Good morning. If you like coconut you are going to love this recipe!

    Ingredients

    1 cup flour
    1 teaspoon baking powder
    1/2 cup sugar
    2 cups coconut powder
    1 egg beaten
    1 tablespoon milk
    3 tablespoons butter melted

    Preheat the oven to 355 F (180C).
    In a bowl mix together the flour and baking powder. Stir in the sugar, butter, egg, milk and 1 cup of coconut.
    Mix well with your hands and form small balls (about 20).
    Roll them oven the other cup of coconut. Place them on a baking sheet and bake for 20 min. Ready!

    Recipe 108- Mizithra Salad

    Good morning. Today we are preparing a fantastic salad.
    If you can't have mizithra (soft, white cheese from Crete) you can use mozzarella.

    Ingredients

    1 lettuce chopped
    2 cups mizithra cut in small pieces
    5 sun dried tomatoes cut in pieces
    1 tomato chopped
    1 avocando chopped
    2 slices of bacon chopped (it's better to cook it for 2-3 min)
    1 teaspoon oregano
    1 tablespoon balsamic vinegar
    2 tablespoons olive oil
    salt/pepper to taste

    In a large bowl mix all the ingredients. Refrigerate for 1 hour before serving. Yummy!

    Recipe 107- Delicious Marinated Pork

    Good morning.
    This is a very nice recipe. Invite your friends for dinner and impress them!

    Ingredients

    500 gr pork meat cut in cubes
    5 onions chopped
    4 cups vinegar
    10 bay leaves
    fresh ground pepper 

    In a large pan put several pieces of meat at the bottom. Cover with onions, bay leaves, pepper. Place another layer of meat and on top the onions, bay leaves and pepper. Do the same until the meat, onions and bay leaves finish.
    Pour in the vinegar, cover with plastic wrap and refrigerate overnight.

    Preheat the oven to Broil Hi. Take the cubes of meat out of the marinade and put them on small wooden skewers. Place them in a greased baking pan.
    Broil them for 10 min, turn them and broil for another 10 min. Ready!

    2 cans tuna in water drained and cut in small pieces
    1 onion chopped
    1/2 cup parsley chopped
    juice from 1/2 lemon
    2 tablespoons mayonnaise
    1 teaspoon mustard
    1 teaspoon ketchup
    1 green pepper chopped
    1 red pepper chopped

    In a large bowl put all the ingredients and mix well. Yes, this is it!

    Recipe 105- Pork chops

    Good morning.
    This recipe is quick, easy and very tasty!

    Ingredients

    6 pork chops
    2 cups water
    1/2 cup olive oil
    5 potatoes peeled and cut in 4 pieces each
    basil/oregano/salt/pepper to taste

    Preheat the oven to 355F (180C).
    Season the pork with the spices. Place it in a big baking pan. Add the potatoes and pour in the oil and water.
    Bake for 1 hour. Ready and fantastic!

    Recipe 104- Peinirli (small greek cheese bread)

    For the dough
    
    
    
    
    5 cups flour
    1 teaspoon dry yeast
    1 cup warm water
    1 teaspoon salt
    
    
    
    
    For the topping 
    
    
    
    
    500 gr yellow cheese shredded
    2 tablespoons milk
    2 tablespoons butter melted
    
    
    
    
    
    
    In a bowl mix together the water with the yeast. Gradually add the flour and stir well. Add the salt. Knead the dough until smooth and cover with plastic wrap.
    Let rise for 1 hour then knead again and let rise for another hour.
    Preheat the oven to 415 F (210C). Divide the dough into 5 balls. Shape each ball like a thick canoe making a deeper place in the middle where you will put the topping.
    Place each dough canoe on baking sheet and add the topping (you have to mix together the cheese, milk and butter).
    Bake for 30 min and serve hot. 
    You can add some more butter if you want.

    Recipe 103- Black olive paste

    This is fantastic!
    An ideal spread for your fresh baked bread!

    Ingredients

    250 gr black olives ( use greek olives, they are the best)
    1/2 cup capers
    1/4 cup olive oil
    juice from 1 lemon
    salt/ pepper

    Put all the ingredients in the blender and.. blend them! There you go. Ready in no time.

    Recipe 102- Tiganites (greek waffles)

    This is perfect for a late breakfast during the weekend. You will need a waffle maker.
    Otherwise cook them in a non sticky pan over medium temperature.

    Ingredients

    2 cups flour
    2 teaspoons baking powder
    2 teaspoons sugar
    1/2 teaspoon salt
    1/2 teaspoon vanilla powder
    1 cup milk
    3 eggs beaten
    1/2 cup vegetable oil


    Preheat the waffle maker.
    In a large bowl combine the dry ingredients.
    In another bowl mix together the eggs, milk, oil. Pour this mixture into the large bowl and stir well.
    Put 1 tablespoon of butter in the waffle maker and let melt.
    Using a big spoon take a portion of the mixture and place it in the waffle maker. Let cook until light brown. It makes 6 tiganites (waffles).
    Serve immediately with cinnamon and honey.

    Recipe 101- Spetzofai

    Hello.
    This a yummy greek recipe with sausages and peppers. You can use your favorite kind.

    Ingredients

    5 sausages cut in slices
    1 onion chopped
    1 tomato chopped
    1 green pepper chopped
    1 red pepper chopped
    1 yellow pepper chopped
    1 chilly pepper chopped
    1/2 cup olive oil
    250 ml tomato sauce
    1/4 cup red wine
    1 teaspoon oregano
    salt/pepper to taste

    Preheat oil in a deep pan over medium high temperature. Put in the sausages and cook for 5 min. Pour in the wine. Stir in the peppers, tomato, onion. Allow to cook for another 5 min. Add the tomato sauce and bring to boil. Reduce the temperature to sim and cook for 1 hour. In the end add the spices.

    Recipe 100- Nadine's Chicken Nuggets

    Hi. This is easy, quick and delicious.

    Ingredients

    2 cups chicken breast cooked and chopped
    1 onion chopped
    1 cup milk
    4 tablespoons flour
    2 tablespoons butter
    2 eggs beaten separately
    1 cup breadcrumbs
    salt/pepper
    olive oil for frying

    Heat a small frying pan over medium temperature, combining together the flour, butter and milk. Wait until the mixture starts boiling and gets thick.
    Remove from heat. Add the onion, chicken, salt, pepper to taste and one egg. Mix well and make small balls from the dough. Roll each ball over the other egg and breadcrumbs. Do this twice. Then refrigerate for 2 hours.
    They are ready to cook.
    Preheat the oil in a deep pan and fry them until they are golden brown (10min).

    Recipe 99- Nadine's Marinade



    • Hello. This is a fantastic marinade for beef or chicken. Make sure to marinade the meat for at least 8 hours!

    Ingredients

    • 1/3 cup fresh lime juice
    • 1/4 cup tequila
    • 2 cloves garlic chopped
    • 1 tablespoon  cilantro chopped
    • 1 teaspoon oregano
    • 2 teaspoons  cumin
    • 1 teaspoon  black pepper

    In a large bowl combine all the ingredients and then put inside the meat. After at least 8 hours, remove the meat and preferably bake it (you can also fry it if you want). The taste is awesome.

    Recipe 98- Delicious Onion Rings

    Fancy something light? Then don't go for this recipe!

    Ingredients

    3 big onions cut in rings
    1 cup flour
    1 cup beer
    salt/pepper to taste
    vegetable oil for frying

    Preheat the oil in a deep pan, over medium high temperature.
    In a big bowl mix together the flour, beer, salt and pepper.
    Place the onion rings one by one inside the bowl and fry them until golden brown.
    Put them on a plate covered by kitchen paper. Yummy!

    Recipe 97- Nadine's Baked Fish Fillet

    Hi.
    Here is an amazing recipe! You can use whatever fish you like.
    I used Hammour.

    Ingredients

    500 gr fish fillet
    1 onion chopped
    2 tomatoes chopped
    1/2 cup parsley chopped
    3 green peppers chopped
    2 bay leaves
    1 tablespoon olive oil
    1/4 cup white wine
    salt/pepper

    Preheat the oven to 390F (200C).
    In a baking pan place the fish. Pour in the oil and wine.
    Add all the other ingredients. Bake for 45 min.

    Recipe 96- Keftedakia

    Hello. Today we have a recipe rich in calories but absolutely fantastic.
    Fried small meat balls.

    Ingredients

    1 kg minced beef
    1 tablespoon vinegar
    1 tablespoon salt
    1/2 tablespoon pepper
    1 egg beaten
    1/4 cup fresh mint chopped
    1-2 cups flour in a bowl
    olive oil for frying

    In a big bowl mix together the beef, egg, mint and seasonings. Make sure you have a mixture as dry as possible. Take small portions and form into small balls. Place them into the flour, roll them over until they are totally covered by flour.
    Preheat oil in a deep pan over high temperature. Put the meat balls in and fry for 5 min, turn them over and fry for another 5 min. Ready!

    Recipe 95- Fasolakia in tomato sauce

    Hi.
    Here is another greek recipe. Fresh green beans with tomato sauce. Very nice and healthy, ideal for a light lunch or dinner.

    Ingredients

    1 kg fresh green beans ( you have to wash them and cut their edges with a knife)
    1 onion chopped
    2 potatoes peeled and cut in small pieces
    1 tomato chopped
    500 gr tomato sauce
    1 cup olive oil
    1 cup water
    1/4 cup white wine
    salt/pepper

    In a big pot, preheat 1/4 cup olive oil over medium temperature and add the onion, tomato and potatoes. Pour in the wine and stir in the beans. Add the tomato sauce, the rest of the oil and the water. Bring them to boil, reduce the heat to sim and allow to cook for 2 hours. Add salt and pepper to taste.

    Recipe 94- Kaltsounakia (Crete's sweet mini cheese pie)

    Good morning. This is a famous recipe from the island of Crete.
    They are absolutely fantastic!

    Ingredients

    500 gr flour
    1 tablespoons RAKI (alcoholic beverage from Crete)
    1 tablespoon olive oil
    1 cup water
    1 teaspoon vinegar

    For the filling

    500 gr MIZITHRA from Crete shredded
    250gr Feta cheese shredded
    2 eggs beaten
    1 teaspoon cinnamon

    Olive oil for frying

    In a big bowl combine all the ingredients to make a smooth dough. In another bowl mix together the ingredients for the filling.
    Place the dough on a slightly floured surface and stretch it from the center outwards using a rolling pin.
    Cut small pieces of dough and put inside some of the filling. With your fingers close the edges forming a small ball. Punch it down a little bit.
    Preheat the oil in a deep frying pan over high temperature and fry the kaltsounakia until they are lightly brown.
    Place them on a kitchen paper to absorb the oil and serve them hot with a sprinkle of honey. Yummy!

    Recipe 93- Yaourtlou sauce (yogurt sauce)

    This recipe is typically served with greek souvlaki. It is also great with burgers (meat, zucchini or tomato burgers).

    Ingredients

    2 cups plain yogurt
    2 cloves garlic chopped
    2 tablespoons olive oil
    1 teaspoon salt
    1 teaspoon pepper

    Put all the ingredients into the blender and simply blend them.

    Recipe 92- The easiest bread

    This is really quick! I think this is the best recipe for bread ever!


    Ingredients

    5 1/4 cups flour
    1 teaspoon yeast
    1 1/4 cup warm water
    2 teaspoons salt

    In  large bowl pour in the water and dissolve the yeast. Add the salt then gradually add the flour. Start kneading until you have a smooth dough.
    Give the shape of a loaf and cover with plastic wrap for 2 hours.
    Preheat oven to 480F (250C).
    Place the loaf on a baking sheet and bake for 15 min. Reduce the heat to 300F (150C) and continue baking for another 20 min. You can smell the freshly baked bread!

    Recipe 91- Nadine's Chicken FRIKASE

    This is another traditional greek recipe. We usually cook this with lamb, but I don't like lamb. I prefer chicken! You can cook it with the meat you like better.

    Ingredients

    1 kg chicken breast cut in pieces
    2 big lettuce cut in pieces
    1 cup fresh onion chopped
    1/2 cup anise or parsley chopped
    1 cup olive oil
    3 cups water
    1 tablespoon white wine
    juice from 2 lemons
    2 eggs beaten
    2 tablespoons corn flour
    salt/pepper to taste

    In a big pot heat the oil over medium high temperature and put inside the chicken. Cook for 5 min then pour in the wine and add the onion, lettuce and anise. Pour in the water and bring to boil.
    Reduce the temperature and allow to cook for 2 hours. Add salt and pepper.
    In a bowl stir the juice and the corn flour. Pour in 1 cup of the sauce from the cooked food. Make sure it is not very hot, just warm. Mix well and add the eggs gradually. Pour this mixture back into the pot.
    Bring to boil and then remove from heat. Done!

    Recipe 90- Ntomatokeftedes (tomatoburgers)

    This is awesome! Quite similar to kolokithokeftedes. You should try them both!

    Ingredients

    4 tomatoes finely chopped
    1 onion finely chopped
    2 zucchini finely chopped
    1/3 cup mint chopped
    1 cup flour
    salt/pepper to taste
    olive oil for frying

    In a bowl mix together the tomatoes, onion, zucchini and mint. Add the flour. You should have a watery dough.
    Preheat the oil in a deep frying pan over medium temperature. With a big spoon take small amounts of dough and place them into the pan. Fry for 3 min, then turn and fry for another 3 min. Delicious!

    Recipe 89- Delicious cheese soufflé

    Hello. This is a delicious souffle for 2.

    3 slices toast bread cut in pieces
    1 cup milk
    4 eggs beaten
    4 slices bacon cut in pieces
    1 tablespoon butter melted
    500 gr yellow cheese shredded

    Preheat the oven to 355F (180C).
    It is better to use 2 small baking pans. Arrange  the bread at the bottom. Spread the butter with milk and refrigerate for 2 hours. Sprinkle with  the cheese and add the bacon. Pour in the eggs.

    Bake for 55 min. Serve while hot.
