Recipe 180- Baked Rice with Feta cheese

Good morning!
This is the last recipe of the project! It is perfect for the little ones who have just started eating the family food.

Ingredients

2 cups rice
3/4 cup olive oil
1 lit milk
2 cups feta cheese cut in small pieces
salt/pepper to taste

Put all ingredients in a baking pan. Mix well.
Bake at 355F (180C) for about 1 hour or until all liquids are absorbed.

Recipe 179- Mushroom Soup

Not very popular in summer, i know!
Use this recipe if you have a sore throat or keep it for cold winter days!

Ingredients

1 onion chopped
500 gr mushrooms cut in small pieces
2 tablespoons flour
5 cups water
2 tablespoons olive oil
1/4 cup white wine
1/2 cup milk cream
salt/pepper to taste
2 tablespoons fresh parsley chopped

Heat the oil in a deep pan over medium temperature. Sauté the onion and stir in the mushrooms. Pour the wine and allow to cook for 5 minutes. Add the flour and dissolve it well. Pour in the water and bring to boil. Reduce the temperature to sim and cook for 30 minutes. Add salt and pepper.
Stir in the milk cream and serve immediately with a sprinkle of fresh parsley.

Recipe 178- The easiest cheese pie

Good morning.
This is a quick and delicious recipe. It makes a fabulous snack or a nice dinner if served with some green salad.

Ingredients

3 cups flour
1 teaspoon baking powder
1 cup philadelphia cheese
3/4 cup vegetable oil
1/2 cup condensed milk
3 cups feta cheese cut in small pieces
5 eggs beaten with 1 cup condensed milk

Preheat the oven to 320 F (160C).
In a bowl mix together the flour, baking powder, cheese and milk. Pour in the oil. Mix well until you have a smooth dough. Place it in a round medium baking pan . Sprinkle with the cheese and pour in the eggs and milk.
Bake for 1 hour, then broil to Hi for 3-5 minutes.
Serve hot or cold.

Recipe 177- No bake Chocolate Cake

Good morning!
This is my favorite chocolate cake. It is very popular in Greece and everybody loves it.

Ingredients

250 gr butter
8 tablespoons cocoa powder
1 cup icing sugar
1 teaspoon vanilla powder
250 gr digestive cookies crushed

In a sauce pan heat the butter over medium temperature. Add the cocoa powder,vanilla and sugar. Stir well.
Mix in the cookies. Remove from heat and combine the ingredients very well. Place the mixture onto a piece of aluminum foil, wrap it all over and put it in a cake pan in order to take its shape.
Refrigerate for at least 5 hours (better overnight). Cut in slices and serve.

Recipe 176- Nadine's Meat Loaf

This is just awesome!

Ingredients

800 gr minced beef
2 eggs beaten
1 cup breadcrumbs
1/2 cup onion chopped
1/4 cup parsley chopped
1/4 cup ketchup
2 tablespoons milk
1 tablespoon mustard
salt/pepper to taste

Preheat the oven to 350 F (175C).
Grease a baking pan 22X13cm.
In a bowl mix all ingredients. Form a loaf and place it in the pan. If you want you can spread some ketchup on the top of the meat loaf.
Bake for 1 1/2  hours. Let cool for 10 minutes. Cut in slices and serve.

Recipe 175- Delicious Apple Pie

Good morning!
This is super!

Ingredients

5 cups flour
1 cup vegetable oil
1 teaspoon baking powder
5 apples peeled, shredded and well drained
1 tablespoon cinnamon
1 1/2 cup sugar
2 eggs beaten

In a bowl mix together the apples with sugar and cinnamon.
Preheat the oven to 355F (180C).
In a large bowl combine all other ingredients. You should have a firm dough.
Grease a medium round baking pan and put half of the dough. With your fingers make sure the dough is well placed all over the pan. Add the apple mixture. Place on top the rest of the dough.
Bake for 45 minutes or until golden brown.
Serve hot with a scoop of vanilla ice cream.

Recipe 174- Baked Broccoli

Good morning everyone.
Almost done. I have 6 recipes to go!
After that? Any ideas?
Well, i will think about it..while cooking!

Ingredients

1 broccoli boiled
250 gr milk cream
4 stripes of bacon cut in small pieces
1 cup graviera Kritis shredded

In a baking pan put the broccoli cut in pieces. Preheat the oven to 385 F (195C).
Heat a sauce pan over high temperature and cook the bacon for 5 minutes. Reduce the temperature to sim and allow to cook for 5 more minutes. Add the milk cream and stir well.
Pour the sauce over the broccoli and sprinkle with cheese.
Bake for 10 minutes. Yummy!

Recipe 173- Perfect Peachy Freeze

Hi.
This is an incredible recipe for the kids!

Ingredients

1/2 cup milk
1 cup fresh peach peeled and cut in pieces
1 teaspoon sugar

Pour the milk in an ice cube tray and freeze overnight.
Next day prepare the peaches and pout them in the blender with the milk ice cubes and sugar.
Blend until you have a nice and smooth mixture.
Pour into 2-3 serving dishes and serve immediately.

Recipe 172- Saute Carrots

This is so easy and very tasty!

Ingredients

5 carrots peeled and cut in slices
2 tablespoon butter
1 cup lemonade or sprite
1 teaspoon salt
1 teaspoon chilly powder
1 teaspoon fresh parsley chopped

In a medium pan heat the butter over high temperature and add the carrots.
Cook for 1 minute then reduce the heat and add the lemonade, salt, chilly. Mix well and increase temperature to bring to boil.
Reduce the heat again and allow to cook for 5 minutes.
Serve immediately with a sprinkle of fresh parsley.

Recipe 171- Famous Banana Bread

Good morning.
A special treat for the little ones or for anybody with a sweet tooth!

Ingredients

1/2 cup butter melted
1 1/2 cup banana peeled and sliced
2 cups flour
1 teaspoon baking soda
1 cup sugar
2 eggs beaten

Preheat the oven to 350 F (175C). Grease a 22X12cm baking pan.
In a bowl combine sugar, butter and eggs. Stir in banana and smash it while you are mixing.
Gradually add the flour and baking soda. Stir well. Pour the mixture into the baking pan and bake for 1 hour. Smells good!

Recipe 170- Baked Asparagus with Feta cheese

Hi there.
This is a nice recipe with asparagus. You can use canned or fresh.
If you use fresh you have to wash them well and discard the ends.

Ingredients

2 cans asparagus drained
1/4 cup olive oil
2 cups feat cheese cut in small pieces
juice from 1 lemon
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
1 clove of garlic chopped
1/2 cup fresh parsley chopped

Preheat oven to 400 F (205C).
In a pan heat the oil over medium temperature. Add the garlic, salt, pepper and oregano. Allow to cook for 5 minutes.
Arrange the asparagus in a single layer on a baking sheet. Pour in the mixture of oil and seasonings.
Add the cheese.
Bake for 15 minutes.
Sprinkle with parsley and drizzle with lemon juice. Yummy!

Recipe 169- Caramel Sauce

Good morning!
This is fantastic.
You can serve it with pan cakes or ice cream.

Ingredients

1 cup sugar
1/2 cup milk cream
6 tablespoons butter

In a medium pan put the sugar and heat over medium high temperature. Use a wooden spoon to stir the sugar. Once it starts boiling stop stirring, reduce the temperature to sim and allow the sugar to caramelize.
It will need 2-3 minutes.
Add the butter and stir well.
Remove from heat and pour in the milk cream still stirring well.
Pour the sauce into a glass jar and refrigerate if you do not want to use immediately.
Always warm it before serving.
A little bit tricky, as you might burn the sugar at first. Once you master the first step it gets easier!

Recipe 168- Green Onion Dip

Good morning.
This is so tasty, not right now of course as breakfast!
Make this recipe for your lunch or dinner and have some gum handy in your pocket!
Serve it chilled with baked potatoes or as a dressing to any fresh green salad.

Ingredients

1 cup mayonaise
1/2 cup green onion chopped
1 teaspoon mustard
1 clove of garlic chopped
1 cup sour cream
1/2 cup parsley

Put all ingredients into the blender and ..BLEND until you have a smooth mixture.
Pour it in a bowl and refrigerate for 3 hours before serving.

Recipe 167- Bread Sticks

Hello.
These bread sticks are so easy to make and they taste absolutely fantastic!

Ingredients

3 cups whole wheat flour
1 tablespoon sugar
1 teaspoon salt
1 1/4 cup warm water
1/4 butter melted
1 teaspoon dry yeast.

Dissolve yeast into the water.
In a bowl combine the flour, salt and sugar. Stir in the butter and add the water with yeast. Mix well and cover with plastic wrap.
Let the dough sit for 45 minutes.
Preheat the oven to 400 F (205C).
Divide the dough into 4 portions and make from each one of them a large rope. Cut 12 pieces from each rope and form the breadsticks. They should be as thin as a pencil and about 15 cm long.
Place them onto a baking sheet and bake for 15 minutes or until golden brown.

Recipe 166- Nadine's Tomato Soup

Hi!
This is a very healthy and easy to make soup.
It makes a delicious appetizer or an excellent light snack.

Ingredients

5 big tomatoes cut in pieces
1 small onion chopped
1 teaspoon basil
1 teaspoon oregano
2 teaspoons salt
1 teaspoon pepper
4 tablespoons olive oil
3 teaspoons sugar
1 tablespoon balsamic vinegar

Put all ingredients in a bowl and mix well. Refrigerate for 30 minutes and then put the mixture into the blender and blend until you have a smooth and creamy soup.
Serve immediately with some bread sticks.

Recipe 165- Rizogalo (rice pudding)

Good morning.
This is an old time favorite greek dessert.

Ingredients

1 cup rice
2 cups water
4 cups milk
1 cup sugar
1 tablespoon corn flour
2 tablespoons milk for dissolving the flour
1 teaspoon vanilla powder
1 egg yolk beaten

In a pan bring the water to boil then add the rice and simmer for 15 minutes, or until all water has evaporated.
Pour in the milk and start mixing. Raise the temperature and add the sugar. Stir in the vanilla and egg yolk. Bring to boil again and simmer once more. Allow to cook for about 35 minutes. You have to stir occasionally.
In the end you should have a thick cream pudding. To thicken it a little more dissolve the corn flour into the milk (2 tablespoons) and add this to the pudding.
Stir well and allow to cook for 5 more minutes.
To serve, divide the pudding into small bowls and sprinkle with cinnamon powder.

Recipe 164- Awesome Peach Cake

Good morning all!
Here is a very nice recipe. I hope you like peaches!

Ingredients

1/2 cup butter melted
1/4 cup sugar
1 egg beaten
1 cup flour
1 teaspoon vanilla powder
1/2 teaspoon baking powder
1/4 teaspoon salt
2 peaches peeled and sliced
3 tablespoons sugar
1 teaspoon cinnamon powder

Preheat oven to 350 F (175C).
Grease a springform round medium baking pan.
In a small bowl combine flour, salt and baking powder.
In a large bowl mix together the butter, sugar, egg and vanilla powder. Stir in the dry ingredients from the small bowl. Mix well and pour the mixture into the baking pan. Arrange the peaches and sprinkle with sugar and cinnamon.
Bake for 40 minutes. Very yummy!

Recipe 163- The Best Espesso Cake

Hello coffee lovers.
Here is something for you!

Ingredients

1 1/2 cup flour
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
3 tablespoons cocoa powder
6 tablespoons vegetable oil
1 tablespoon vinegar
1/2 cup cold espresso coffee
1/2 cup cold water
1 tablespoon vanilla powder

Preheat the oven to 350 F (175C).
In a large bowl mix the dry ingredients first. Stir in the oil, vinegar and gradually add the coffee and the water. Mix well until you have a smooth mixture. Pour it into a small (20X15cm) baking pan and bake for 40 minutes.
Serve with hot fresh coffee.

Recipe 162- Nadine's Meringues (Marenga)

Good morning!
This is awesome. You will love it!

Ingredients

3 egg whites
1 teaspoon vanilla powder
1/8 teaspoon salt
3/4 cup sugar
1/2 teaspoon whiskey
1 cup chocolate sprinkles

Place the egg whites in a large bowl and let stand for 30 minutes.
Preheat the oven to 250 F (120C).
Add salt, whiskey and vanilla and start mixing with an electric mixer. Gradually add sugar and continue mixing until you have a stiff form and sugar is dissolved. Combine chocolate sprinkles.
Place a baking sheet on a large baking pan and with a teaspoon drop the meringue little by little. Every drop should be at least 5 cm apart from the other.
Bake for 45 minutes, then turn the oven off and leave in the meringues for 1 hour.
Take them out of the oven and let cool completely. Ready to serve!

Recipe 161- Green Beans Salad

Good morning!
Another light and fresh dish for the summer.

Ingredients

500 gr green beans cooked for 5 minutes
1/2 cup celery chopped
1/4 cup parsley chopped
2 tablespoons capers
3 tablespoons olive oil
1 tablespoon mustard
juice from 1 lemon
salt/pepper to taste

Mix together beans, capers, parsley and celery in a large bowl.
Sprinkle with salt and pepper.
In another bowl combine the oil, lemon juice and mustard. Pour the mixture over the vegetables. Refrigerate for 1 hour. Ready! Healthy, delicious, easy to make!

Recipe 160- Greek Island Salad

hello!
Another light and fresh recipe from the Greek islands!

Ingredients

1 cup couscous cooked
1 cucumber peeled and sliced
1 tomato chopped
1 onion chopped
1 cup feta cheese cut in pieces
1 cup olives
1 red pepper sliced
2 cups cooked chick peas
1 tablespoon parsley chopped
1 clove garlic chopped
4 tablespoons olive oil
juice from 1 lemon
salt/pepper to taste
5 lettuce leaves

In a big bowl mix together the  cucumber, tomato, pepper, onion, parsley and chick peas.
In another bowl prepare the dressing by combining the oil, juice, garlic.
On a large platter arrange the lettuce leaves. Put the couscous in the center. On top place the mixed vegetables and pour on to them the dressing. Add feta and olives.
Yummy! Looks delicious!

Recipe 159- Very Chocolate Ice Cream

Who wants some ice cream?
This time the recipe is for chocolate ice cream. Fantastic!

Ingredients

1 big can sweetened condensed milk
1 cup chocolate syrup
1 teaspoon vanilla powder
2 cups heavy milk cream

In a plastic bowl 12X22 blend together all ingredients. Cover with lid and freeze for 30 minutes. Blend again the mixture and freeze for another 30 minutes. Repeat this for 2 more times (you have to freeze and blend every 30 min 3 times). Let it in the freezer for at least 3 hours until you serve it. It is super chocolate ice cream!

Recipe 158- Water Melon and Feta Salad

Hello there.
This is a very typical Greek dish for the summer.
It makes a great light meal or an amazing snack!

Ingredients

4 cups water melon seedless and cut in cubes
2 cups feta cheese cut in small pieces
1/4 cup fresh mint chopped
1/4 cup olive oil
1/4 cup vinegar
1 teaspoon salt

In a large bowl place the water melon. Pour in the oil and vinegar. Add salt and refrigerate for 15 minutes.
Add the cheese and mint. Mix well and serve on a platter with lettuce leaves on the bottom.

Recipe 157- Sesame Honey Spread

Good morning.
This recipe is for my nephew and of course for any other kid out there who likes tahini!

Ingredients

1/4 cup honey
1/4 cup tahini

First stir the tahini in its jar before using it, to make sure the oil from top is mixed well.
Pour it into a cup and then into a bowl. With a spoon fill 1/4 cup with honey then add it to the bowl and stir well the tahini with the honey. It delicious, healthy and easy! What more do you want?
You can spread it on a whole wheat slice of bread or on top of sliced banana.

Recipe 156- Artichokes a la nadita

Good morning!
This is a popular greek dish.
You can use fresh artichokes if you like but i think the frozen ones are much better. They are easy to prepare and have all their healthy ingredients too!

Ingredients

1 package frozen artichokes or 8 fresh (cut the stem, remove the outer leaves and rub them with lemon)
4 carrots cut in slices
4 potatoes cut in cubes
4 fresh onions chopped
1 bunch of dill chopped
juice from 4 lemons
salt/pepper to taste
1 cup olive oil
4 cups water

In a large pan preheat the oil over medium temperature and saute the onion. Add the artichokes and carrots. Cook for 3 minutes then add all remaining ingredients. Stir well, bring them to boil. Reduce the temperature to sim and allow to cook for 2 hours. Make sure you stir the food  frequently and check if it needs more water. This is it!

Recipe 155- Delicious Corn Bread

Good morning!
This is a nice treat for kids. They will love it!

Ingredients

1 cup flour
1 cup corn flour
1/2 cup sugar
1 cup milk
1/3 cup butter melted
1 teaspoon baking powder
2 eggs beaten

Preheat oven to400 F and place an empty medium baking pan inside.
In a bowl mix together flour, sugar, baking powder. Add the butter, milk and eggs. Mix well.
Take the pan out of the oven and grease it. Pour in the mixture and bake for 35 minutes or until golden brown. Call the kids! They will absolutely adore it! Keep some for you too!

Recipe 154- No Knead Super Bread

Yes, it is true. No need to knead!

Ingredients            

3 cups whole wheat flour
1/4 teaspoon yeast
1 teaspoon salt
1 1/2 cup warm water

In a big bowl pour in the water and dissolve the yeast. Let sit for 5 minutes then add the salt and gradually stir in the flour. Cover with plastic wrap and let sit overnight.
Preheat the oven to 400 F. Place the dough in an oven proof pan with lid. Bake for 30 minutes, then uncover and bake for another 15 minutes. Remove from pan just after baking and place on a plate.
This is it!

Recipe 153- Fried Mushrooms

Good morning!
This is just awesome!

Ingredients

2 cups fresh whole mushrooms
2 cups flour
1 1/2 cup water
1 teaspoon baking powder
1 teaspoon garlic salt
1 teaspoon basil
1 teaspoon cumin powder
vegetable oil for frying

In a large bowl mix together all ingredients. Add the mushrooms last and make sure they are fully covered by the mixture.
Preheat the oil in a frying pan over high temperature. Fry the mushrooms for 5 minutes or until golden brown. Yummy!

Recipe 152- Cucumber and crab salad

Hello.

This is incredible. If you are on a diet use light mayonnaise. If you cannot find crab, use prawns boiled.

Ingredients

1 1/2 cup mayonnaise
1 tablespoon mustard
2 tablespoons sugar
1 tablespoon celery chopped
2 small cucumbers peeled and chopped
1 cup crab meat chopped
1/2 cup roasted sun flower seeds

In a large bowl combine all ingredients. Sprinkle on top with the sunflower seeds.

Serve immediately or refrigerate overnight.

Recipe 151- Stuffed Peppers

Good morning to all!
If you like spicy peppers and feta cheese, this combination will drive you crazy!

Ingredients

15 long chilly peppers
3 cups feta cheese
2 tablespoons fresh parsley chopped
1 teaspoon oregano
1 teaspoon salt
15 small pieces of bread

Preheat the oven to 390 F. In a bowl smash the cheese and combine with parsley, salt, oregano.
Remove the cups of the peppers and carefully scoop out seeds.Fill each pepper with the cheese mixture and press a piece of bread into the pepper. This is to make sure no cheese melts out. Cover each pepper with its cap and place them on a greased baking pan. Bake for 25 minutes, then turn the broil on to Hi and broil for 3-5 minutes. Ready!
