Recipe 88- Kolokithokeftedes (zucchini burgers)

This is a traditional greek appetizer.

Ingredients

4 zucchini shredded
1 onion finely chopped
1 egg beaten
1 cup flour
1/4 cup anise finely chopped
salt/pepper to taste
olive oil for frying

In a bowl mix all the ingredients until you have a smooth watery dough.
Preheat the oil in a deep frying pan over medium temperature.
With a big spoon take small amounts of dough and place into the pan. Fry the small zucchini burgers for 3 min then turn and fry the other side for 3 min too. Ready!

Recipe 87- Nadine's Beer Bread

Be careful. This bread is not for the kids!

Ingredients

5 cups flour
1 teaspoon baking powder
2 teaspoons salt
1 tablespoon olive oil
1 can beer

In a large bowl stir in all the ingredients and knead until you have a smooth dough. Cover with plastic and let sit for 1/2 hour.
Preheat the oven to 365F (185C). Knead the dough again and make a loaf. Place it on a baking sheet and bake for 55 min or until golden brown. The easiest bread ever!

Recipe 86- Nadine's savory cake



Good morning.
Today we are baking a .. different cake.


Ingredients


500 gr yellow cheese of your choice shredded ( I used pecorino amfilohias, ladotiri mitilinis, kaseri kritis)
1 1/2 cup flour
1 teaspoon baking powder
3 eggs
3/4 vegetable oil
1 cup plain yogurt
1 green pepper chopped
1 yellow pepper chopped
black pepper to taste


Preheat the oven to 355F (180C).
In a large bowl beat the eggs with the yogurt and oil. Mix in the cheese, the flour, the peppers and the black pepper and stir well.
Pour the mixture into a greased cake pan and bake for 1 hour or until golden brown. So yummy!

Recipe 85- Greek RAVANI (semolina dessert)

Good morning. This dessert is fabulous! You should try it immediately!

Ingredients

4 eggs
2 cups semolina
1 cup flour
1 cup plain yogurt
1 1/2 teaspoon baking powder
1 teaspoon vanilla powder
1 cup vegetable oil
1 cup sugar
1 teaspoon lemon juice

For the syrup
 4 cups sugar
3 1/2 cups water
1 teaspoon lemon juice

Preheat the oven to 355F (180C).
In a large bowl mix together the flour, semolina, vanilla and baking powder.
In another bowl beat the sugar with the oil and the yogurt. Beat in the eggs one by one. Add the powder mix and stir well.
Grease a large (36cm) pan and put some flour on the bottom. Pour in the mixture and bake for 45 min.
Let cool down.

Prepare the syrup by heating the ingredients in a pot over medium temperature. Bring to boil for 5 min.
Pour the syrup while it is hot over the ravani gently and evenly. It will double in size (hopefully!).

    Recipe 84- Nadine's Gemista (Baked stuffed vegetables)

    Good morning.
    Today's recipe is not easy. It takes some time. It is a typical greek dish and it tastes great!
    So make the effort. It is worthwhile!


    Ingredients


    4 tomatoes
    4 green peppers
    4 eggplants
    1 cup olive oil
    1/2 cup parsley chopped
    1 onion 
    2 potatoes cut in pieces
    2 cups water
    2 cups rice
    salt/pepper to taste








    Slice-off the top of the tomatoes, peppers and eggplants. Use a spoon to remove the inside part of them. Try to leave the empty tomatoes as thin as possible but be careful not to damage their skin. Save the inside parts of the tomatoes and eggplants you have removed. They will be used for the stuffing. Mash them with a blender and mix them with the rice, the onion and the parsley. Cook the stuffing with olive oil for 5 min. Add salt and pepper as desired. 
    Do not overcook the stuffing. The rice should not be soft. It will soften later in the oven.
    Stuff the tomatoes, the peppers and eggplants. Lid the tomatoes and peppers with their tops. Place them in a pan, surround them with the potatoes.
    Add the olive oil and water.
    Preheat the oven to 355F (180C).
    Bake for 1 1/2 hour covered by aluminum foil. 
    Uncover and bake for another 1/2 hour. 
    Serve with plain yogurt or Feta cheese. Awesome!

    Recipe 83- Amazing pasta tomato sauce

    Hi. As promised, here is my recipe for this incredible pasta sauce.

    Ingredients

    2 large tomatoes finely chopped
    1 onion finely chopped
    100 gr tomato paste
    1 teaspoon salt
    1 teaspoon chilly pepper
    1 teaspoon black pepper
    1 teaspoon oregano
    1 teaspoon basil
    1 1/2 cup water (it is good to use the water from the pasta)
    3 tablespoons olive oil
    1 tablespoon whisky

    Heat the oil in a pot over medium high temperature. Put inside the onion and tomatoes. Mix well and cook for 5 min. Pour in the whisky. Add the paste and the water and bring to boil. Then lower the temperature to sim and allow to cook for 2 hours. Add the seasonings and you are ready to serve!

    Recipe 82- Nadine's pasta





    Good morning. Today we are preparing my favorite kind of pasta.
    Gnocchi the greek way! Tomorrow I will give you a recipe for the most delicious tomato sauce to go with the pasta!

    Ingredients

    5 potatoes medium
    1 egg
    1 teaspoon salt
    1 teaspoon pepper
    1 1/2 cup flour
    1 cup milk

    In a glass bowl put the potatoes peeled and sliced. Add the milk and cook in the microwave for 15 min at hi temperature. Smash them with a big spoon. Cover with plastic wrap and refrigerate overnight.
    Beat in the egg and add salt and pepper. Gradually stir in the flour until you have a smooth dough. Take small pieces and form them like balls. Place them on a lightly floured platter.
    In a large pan bring 3 lit of salted water to boil. Cook few gnocchi at the time  until they rise to the top. Take them out with a slotted spoon.
    When all are ready sprinkle with sauce of your choice and yellow shredded cheese.

    Recipe 81- Melitzanosalata

    This is a unique recipe with eggplants. It is a great appetizer, very popular in Greece.

    Ingredients

    4 medium eggplants sliced in small pieces
    1 small onion finely chopped
    1 tomato finely chopped
    1 clove of garlic
    1 teaspoon salt
    1 teaspoon pepper
    2 tablespoons vinegar
    4 tablespoons olive oil

    Preheat the oven to 400 F (200). Bake the eggplants for 1hour, or until they are tender enough. Then put them in the blender, add the oil and vinegar and blend well.
    In a large bowl combine this mixture with all the other ingredients.
    This is it!
    Tastes nice on bread or with french fries, like the tirokafteri.

    Recipe 80- Tirokafteri

    Hello.
    If you are not greek, now you are laughing.
    What is this? 
    This is feta cheese chilly spread. Just awesome. 
    It goes as an appetizer, for your bread or with french fries.


    Ingredients

    300 gr feta cheese shredded with your hands
    1 green chilly pepper very finely chopped
    2 tablespoons olive oil
    1/4 cup milk

    Put all the ingredients in the blender and simply blend them.
    Perfect!

    Recipe 79- Tsoureki (greek sweet bread)

    Hello.
    This is our traditional sweet bread. We enjoy this usually during Easter.

    Ingredients

    5 cups flour
    1 teaspoon mastiha
    1 teaspoon mahlepi
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    2 eggs beaten
    1 cup sugar
    1 teaspoon dry yeast
    1/4 warm water
    1 cup butter melted
    1 cup milk warm

    In a large bowl add milk, salt, cinnamon.
    In a blender put the sugar, mastiha and mahlepi and blend. Add to the big bowl. Pour in the butter. Mix well with a wooden spoon.
    Dissolve the yeast in the water and add to the mixture. Beat in the eggs. Start adding the flour and stir well first with the spoon and then with your hands until you have a smooth dough.
    Cover with plastic wrap and let rest in a warm place for 2 hours.
    Knead the dough again and form to balls or ropes. Punch them down a little bit and place them on a baking sheet.
    Preheat the oven to 350F (170C).
    Brush the top of the tsoureki with a beaten egg and bake for 30 min. Then broil at HI for 3-5 min or until golden brown.

    This is it. Tricky? Oh, yes but you will love it!

    Recipe 78- Yiouvetsaki Nadinaki

    Hello.
    Today we are preparing a traditional greek dish that we usually cook on Sundays.

    Ingredients

    800 gr beef cut in small pieces
    1 tomato chopped
    1 onion chopped
    1 chilly pepper chopped
    1 big eggplant chopped
    1 teaspoon oregano
    1 teaspoon basil
    1/2 cup olive oil
    400 gr tomato sauce
    1/2 cup red wine
    350 gr small pasta (penne or even smaller)
    200 gr shredded cheese (i use a yellow cheese from Crete)
    salt/pepper to taste

    In a big pot heat the oil over medium temperature.
    Put the onion, tomato, eggplant, chilly pepper and beef. Pour in the wine and cook for 5 min. Add the tomato sauce, oregano, basil and pepper. Lower the temperature to sim and allow to cook for 4 hours. The last half hour add the pasta. If there is not enough sauce you can pour in 1 cup of water before cooking the pasta.
    When you are done with this, preheat the oven to 350 F (176C). Take one portion of food and fill in a small baking pot. Prepare as many as you like. Sprinkle shredded cheese  on top. Bake them for 30 min.

    Recipe 77- Nadine's brown cookies

    These cookies are sooo delicious!

    Ingredients

    1/2 cup butter melted
    1 1/2 cup brown sugar
    1 egg
    2 cups flour
    1 teaspoon vanilla powder


    Preheat oven to 350F (175C).
    In a bowl mix the butter with sugar and egg. Stir in the flour and vanilla. Mix well with your hands until you have a smooth but sticky dough.
    With a tablespoon take small portions of dough, place them on a cookie sheet and press them down to flatten.
    Bake for 11 min. Exactly 11!

    Recipe 76- Black Eyed Peas Salad (mavromatika fasolia)

    Hi there.
    I think that except from my greek friends, no one else knows mavromatika fasolia..
    You can find them at the grocery shops net to lentils and other kind of peas. They make a nice and very nutritious salad.

    Ingredients

    250 gr black eyed peas
    1 tomato chopped
    1 fresh onion chopped
    1 tablespoon vinegar
    3 tablespoons olive oil
    5 black olives (kalamata olives are awesome!)
    1 teaspoon lemon juice
    1 teaspoon oregano
    1/2 cup fresh parsley chopped
    salt/pepper to taste

    In a pot bring some water to boil and add the peas. Cook for 5 min then drain them.
    Boil some water again (about 4-5 cups) and put back in the peas. Allow to cook at low temperature for 2 hours (or until tender).
    Drain them and put them in a large bowl. Mix in all the other ingredients.

    Recipe 75- Grilled Feta

    Good morning. This is very easy. A traditional greek meze you can find in any greek restaurant. Now you can do it at home!

    Ingredients

    250 gr greek feta cut in thick slices
    1 tomato cut in slices
    1 green pepper cut in slices
    1 tablespoon olive oil
    1 teaspoon oregano
    1/2 teaspoon black pepper

    Preheat the oven to 380F (195C). Cut large pieces of aluminum foil. One for every slice of feta. Put one slice of feta in each. On top place one slice of tomato and pepper. Then sprinkle with the oregano and black pepper and add a few drops of oil. Wrap all the aluminum foils and bake for 30 min.

    Recipe 74- Nadine's Baked Potatoes

    Hello there. This yummy recipe is an excellent side dish for your meals.

    Ingredients                            

    4 medium potatoes
    1 cup philadelphia cheese
    1 teaspoon mustard
    1/2 teaspoon lemon juice
    1 teaspoon chilly pepper powder

    Wash the potatoes, wrap each one with aluminum foil and bake for 1 hour at 450F (230C). In a bowl mix together all the other ingredients and refrigerate. While the potatoes are still hot, cut them lengthwise and divide the sauce on top of each one. MMM, delicious!

    Recipe 73- Grilled Salmon with Philadelphia cheese

    This is a quick and very tasty way to prepare a salmon fillet.


    Ingredients

    2 salmon fillets ( 300 gr each)
    2 tablespoons philadelphia cheese
    1 clove garlic chopped
    1 tablespoon olive oil
    1 teaspoon oregano
    salt/pepper to taste

    Heat the oil in a pot with stripes, over medium temperature. Put the garlic and cheese. Mix well, then add the salmon. Cook each side for 10 min. Sprinkle the oregano, salt and pepper.

    Recipe 72- Nadine's Ntakos

    This is a traditional greek meze from the island of Crete. You can serve it a light main dish or a salad.

    Ingredients

    1 large barley rusk
    1 tomato chopped
    1 small onion chopped
    150 gr feta cheese cut in small cubes or mizithra from crete (this is the original cheese for ntakos)
    2 tablespoons olive oil
    1/2 teaspoon oregano
    salt/ pepper to taste

    You have to moisten the rusk with 1-2 tablespoons of water. Then pour on top of it the oil. Mix all other ingredients and place the mix on top of the rusk. This is it. Your ntakos is now ready to eat.

    Recipe 71- Nadine's greek Tzatziki (yogurt and garlic sauce)

    This is a favorite greek sauce. You can prepare it in no time and use it as a dip for bread, french fries, meat, potato chips (or whatever else you can think of!)

    Ingredients

    300 gr plain full fat yogurt (TOTAL is really the best)
    3 teaspoons garlic salt
    1 tablespoon vinegar
    1 cucumber shredded and well drained
    2 tablespoons olive oil
    1 teaspoon salt

    In a large bowl mix all the ingredients. Put it in the fridge, covered with plastic wrap, for at least 1 hour before serving.

    Recipe 70- Marinated Chicken Breasts

    Hello.
    Today we are going to cook chicken.

    Ingredients

    4 chicken breasts
    200 gr yogurt
    1/2 cup white wine
    2 tablespoons olive oil
    1 teaspoon oregano
    salt/pepper to taste

    In a bowl mix all the ingredients except the chicken.
    Add the chicken, mix well and refridgerate at least for 2 hours.
    Preheat the oven to 350 F.
    Put the chicken in a baking pan and bake for 35 min.

    Recipe 69- Beef Stroganoff Nadinoff

    Yummy!

    Ingredients

    800 gr beef cut in cubes
    1 onion chopped
    1 can mushrooms chopped
    1 clove of garlic chopped
    500 ml milk cream
    1/4 cup white wine
    1/2 cup butter
    salt/pepper to taste

    In a pot heat the butter over medium high temperature. Cook the beef for 5 min stirring well. Add the onion, mushrooms, garlic and pour in the wine. Low to sim and allow to cook for 2 hours. Add salt and pepper. Mix in the milk cream and serve immediatelly.

    Recipe 68- Fantastic Frozen Yogurt

    This is a very nice and healthy alternative to ice cream.
    My friend Maria is waiting for this recipe. Stella (her baby girl) will love it!

    Ingredients

    500 gr yogurt (TOTAL is the best choice, you can use full fat or 2%)
    1 peach peeled off and chopped in small pieces
    5 strawberries cut in small pieces
    1 banana cut in small pieces
    2 tablespoons brown sugar

    Mix all the ingredients in a blender and pour the mix into a plastic box. Freeze for 1 hour then blend it again. Put back in the freezer for another hour. Blend once more then freeze for at least 3 hours.
    Your fantastic frozen yogurt is ready!

    Recipe 67- Spicy Beef Burgers

    These burgers are delicious. Try them with the barbeque sauce we made yesterday.

    Ingredients

    500 gr minced beef
    2 slices of toast bread (cut the sides)
    1 teaspoon oregano
    1 teaspoon salt
    1 teaspoon chilly pepper
    1 teaspoon black pepper
    1/2 teaspoon garlic salt
    1 tablespoon olive oil
    cooking pot with stripes

    In a bowl mix all the ingredients with your hands. Make sure to wet the bread only a little bit before adding it to the mixture. Your mixture has to be firm, without juice from the beef, so you have to knead real hard!
    Form 4 large burgers.
    Heat the oil in the pot over hi temperature and cook the burgers for 5 min each side. Ready and yummy!

    Recipe 66- Nadine's Barbeque Sauce

    Today we are making the famous Barbeque Sauce.Unique flavor and irresistible with a juicy burger!

    Ingredients

    1/2 cup ketchup
    2 tablespoons white vinegar
    2 tablespoons chopped onion
    1 tablespoon Worcestershire sauce
    2 teaspoons packed brown sugar
    1/2 teaspoon mustard
    1 clove garlic chopped

    Put all the ingredients in the blender and ..simply blend them!
    There you go! Tomorrow we are preparing the burgers..

    Recipe 65- Stuffed Easter Red Eggs

    You don't know what to do with all these eggs you have from Easter?
    This is a quick and delicious appetizer.

    Ingredients

    6 eggs
    4 tablespoons mayonnaise (you can make your own see recipe 27)
    200 gr Ladotiri Mitilinis shredded
    2 teaspoons mustard
    salt/pepper to taste

    Peel the hard-cooked eggs, and cut in half lengthwise.
    Remove yolks to a small bowl. Mash egg yolks with mayonnaise, cheese, salt and pepper. Stir in mustard.
    Fill egg white halves with the yolk mixture and refrigerate until serving.

    Recipe 64- Bekri Meze

    Good morning. This is a well known greek appetizer ( bekri meze).Yummy!


    Ingredients

    1 kg beef, cut in cubes
    2 onions chopped
    1 ½ cup of olive oil
    1 bay leaf
    1 teaspoon regular mustard
    1 cinnamon stick
    2 cloves of garlic chopped
    1 1/2 cups of red wine
    5 tomatoes chopped
    1 tablespoon tomato paste
    salt and pepper to taste



    In a bowl place meat, wine, mustard, half the oil and all the spices, cover with plastic wrap
    and refrigerate overnight.
    Next day, heat oil and saute slightly onions and garlic.
    Add meat and its juices.Stir until golden.
    Add tomato and 2 cups of water.
    Cover and simmer for 3-4 hours until all water is absorbed.

    Recipe 63- Roasted Lamb for Easter

    Xristos Anesti! Happy Easter!
    Today we are baking a traditional greek easter dish.
    Roasted lamb with potatoes.  

    Ingredients

    4 kg  lamb (leg)
    1 cup olive oil
    2 tablespoons oregano
    1 tablespoon salt
    2 teaspoons pepper
    1 kg potatoes, peeled and chopped
    1/2 cup lemon juice
    1 cup water


    Mix the olive oil, oregano and salt in a large dish and add the leg of lamb,
    turning it to cover all sides with the marinade.
    Let marinate, refrigerated, for at least 1 hour, or better yet overnight, turning occasionally.
    Remove the meat from the refrigerator 1 hour before roasting to allow it to come to room temperature.

    Preheat oven to 350°F. Place the lamb in a roasting pan. Add the lemon juice to the marinade
    remaining in the dish and toss the potatoes with the marinade.

    Place the potatoes around the lamb in the roasting pan, pour in the 1 cup of water and place the pan in the oven.
    Roast for 70 minutes.
    Remove the pan and stir the potatoes so they cook evenly.
    Return the pan to the oven and roast for another 70 to 80 min.
    Remove the roast from the oven and set aside to rest for 15 to 20 minutes.
    Carve the lamb and serve the slices on a large platter with the roasted potatoes.

    Recipe 62- Easter Soup Mageritsa

    Good morning.
    Xronia Polla!
    Today we are cooking a traditional Easter Soup (MAGERITSA in greek).

    Ingredients:  

    900 gr Lamb pluck, liver, lungs and other organs together
    3/4 Cup rice
    1 bunch anise chopped
    500 gr green fresh onions chopped
    3 eggs
    2 tablespoons butter
    lemon juice of 3 lemons
    salt and pepper to taste

    First boil the pluck and remove the foam.Add salt to it and let it boil for a while.
    Take it out and keep the broth.
    Cut the pluck into small pieces and place the broth in a big pot, after passing it through a strainer.
    Combine the onions and anise with the broth. Add the pluck and the butter, mix well.
    Reduce the flame and let them boil till they are almost done.
    Add the rice to it.
    Meanwhile beat eggs in a bowl very well and then add the lemon juice gradually.
    Take some of the soup and add it slowly to the sauce.
    Repeat the process 3 times and finally add the sauce to the pot, stirring the soup slowly.

    I know. It takes time and it's tricky! But it's very very tasty!

    Recipe 61- Baked Vegetables

    Good morning. Today is the Holy Friday for every christian and we do not eat meat.
    So, I will give you an easy and healthy recipe for baked vegetables.

    Ingredients

    3 large eggplants chopped
    3 peppers chopped
    3 tomatoes chopped
    1 onion chopped
    1 clove of garlic chopped
    1 cup fresh parshley chopped
    1 teaspoon oregano
    1 cup olive oil
    salt/pepper to taste


    Preheat oven to 450F (230C).
    In a large baking pan put all the ingredients. So..simple!
    Just bake for 45-55 min.

    Recipe 60- Stuffed Portobello Mushrooms

    Hello.
    This is a delicious recipe. You can try it with or without cheese.

    Ingredients

    6 portobello mushrooms
    1 tomato chopped
    1 onion chopped
    1 clove of garlic chopped
    200 gr metsovone cheese shredded
    1 tablespoon balsamico vinegar
    2 tablespoons olive oil
    1 teaspoon oregano
    salt/pepper to taste

    In a large cooking pot heat the oil over medium temperature. Add the tomato, onion, garlic, the stems of the mushrooms chopped. Pour in the vinegar and add the oregano, salt and pepper. Allow to cook for 10 min.
    Preheat the oven to 450F (230C).
    Place the mushrooms gill up on a baking sheet. Fill them up with the mixture from the pot. Sprinkle the cheese on top.
    Bake for 15 min.

    Recipe 59- Easter cookies

    These cookies  are awesome! We bake them traditionally during this week and we eat them at PASHA.

    Ingredients

    1 cup sugar
    2 eggs
    150 gr butter melted
    1/4 cup milk
    1/4 cup orange jiuce
    500 gr flour
    2 tablespoons baking powder
    1 vanilla powder sachet
    1/4 teaspoon salt
    1/4 teaspoon baking soda

    In a large bowl mix the butter with the sugar. Beat in the eggs and add the milk and juice. In a nother bowl mix the flour, salt, soda, vanilla and baking powder. Add this mixture to the other bowl and start kneeding until you have a smooth dough. Let sit for 15 min and preheat the oven to 350F (180C).
    Take small pieces of dough and shape the cookies. Put them on a baking sheet and bake them for 15 min.
