Recipe 29- Pitoules NAANdinoules


Today i will give you my own recipe for a butter garlic bread similar to naan (indian bread).

Ingredients

1/2 cup warm water
1 teaspoon dry yeast
3 cups flour
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon sugar
1 egg beaten
1 tablespoon milk
1/2 cup butter

In a large bowl mix the water with sugar, then add the yeast. Add the milk, salt, garlic salt and egg. Now gradually add the flour and start kneading until you have a smooth dough. Cover with plastic wrap and let rise for 1 hour.
Preheat the oven at HI grill. Take small balls of dough, place them on a floured surface and roll them with your hands until round and thin. Place them on a baking sheet and brush some butter on top. Bake for 3 min, then turn to bake the other side again for 3 min.
If you want you can brush butter on both sides.

Recipe 28- Nadine's Pretzels

Good morning.

Here is a special recipe for pretzels.

Ingredients

3 1/2 cups flour
2 tablespoons sugar
1 teaspoon salt
1 teaspoon dry yeast
1 tablespoon olive oil
1 cup water warm
1 egg beaten (only the yolk)

Mix the water, sugar and yeast. Gradually add the flour, salt and oil. Kneed the dough until smooth. Cover and let rise in a preheated oven for 40 min.
Divide dough into equal pieces. Roll each into a 50cm rope. Shape into pretzels. Place on baking sheets. Brush the pretzels with the egg yolk. Sprinkle with coarse salt if you like.
Bake at 375F (190C) for 15 min.

Recipe 27- Home made MAYONNAISE

Good morning!
Got tired of the typical mayonnaise in the jar which is full of artificial flavorings and conservatives?

Here is a simple solution, much healthier, super tasty and WITHOUT eggs, so is extra safe!

Ingredients

1 cup condensed milk
1 cup olive oil
juice from 1 lemon
1/2 teaspoon salt
1 teaspoon mustard

Put the ingredients in a blender. Press the button..and blend!
Now you have the most delicious mayonnaise ever!

Recipe 26- Nadine's Beef STIFADO

Hello.
Here is a typical greek recipe for cooking beef.

Ingredients

800 gr beef cut in cubes
1 kg onions
4 tomatoes
1/2 cup red wine
1/2 cup vinegar
1 cup olive oil
2 bay leaves
salt/pepper to taste

Put a little bit of the oil in a large pan and heat over medium high temperature. Put the beef and cook for 5 min. Add the tomatoes and mix well. After 5 min put the onions and cook for another 5 min.
Pour in the wine, bay leaves and the rest of oil. If you want to can add 1-2 cups of water too. Bring them to boil and cook for 2 hours at low temperature. Add salt and pepper to taste.
Your STIFADO is ready!

Recipe 25- Chocolate Chunk Cookies

Yes today i will give you my famous recipe!


Ingredients
2 cups flour
3/4 cup cocoa powder (i use HERSHEY'S)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup melted butter
2/3 cup white sugar
2/3 cup brown sugar
1 teaspoon vanilla extact
2 eggs
1/2 cup chocolate chunks (HERSHEY'S)

Preheat oven to 350F (180C)
Mix flour, cocoa powder, baking soda and salt in a bowl. In another large bowl beat butter,sugar,vanilla. Add the eggs. Gradually beat in the flour mix. stir in the chunks. Place large drops of mix onto a greased baking pan or use baking sheet.
Bake for 10 min.

Recipe 24- Nadine's Pasta Flora


This is a fabulous greek dessert.

Ingredients

250 gr melted butter
500 gr flour
250 gr sugar      
2 teaspoons vanilla extract
3 eggs
1/2 teaspoon salt
1 1/2 teaspoon baking powder
500 gr strawberry jam

In a big bowl mix all ingredients EXCEPT of the jam and 1 egg.
Preheat the oven at 355F (180C). Grease a baking pan 26 cm and place inside 2/3 of the mix. Add the jam. Roll out the remaining mix and cut into strips. Place on top in a criss-cross pattern.
Bake for about 1 hour or until golden brown.

Recipe 23- Cheese pie PEPEKI from Argiro

Hi there. Today we have a cheese pie called PEPEKI.

This recipe is from Argiro Barbarigou and it is very simple and delicious!

Ingredients
200gr flour
1 teaspoon baking powder
2 eggs
2 cups full fat yogurt
1/4 cup olive oil
1 teaspoon red pepper-paprika
300 gr FETA cheese shredded

In a large bowl mix the eggs, yogurt, oil and pepper. Add the cheese. Gradually add the flour mixed with baking powder.
Preheat the oven at 355F (180C). Grease a baking pan 36cm and sprinkle some flour. Pour in the mix and bake it for 45 min or until light brown.

Recipe 22- Pasta with PESTO sauce

Good morning.
Today we are going to enjoy pasta.

I prefer Pesto sauce with my pasta. So if you want to give it a try don't hesitate.
It's awesome!

Ingredients
500 gr pasta of your choice
3 cups fresh basil leaves
1 1/2 cups chopped walnuts
4 cloves garlic, peeled
1/4 cup grated Parmesan cheese
1 cup olive oil
salt and pepper to taste


Boil the pasta for approximately 10 min (until it is al dente). Drain the water.
Put into a blender all the ingredients for the sauce and blend well. Pour the mix over the pasta and stir well.
This is it! Different..But very tasty! Excellent!

Recipe 21-Stuffed eggplants

This is delicious!

Ingredients
3 eggplants cut lengthwise
1 onion chopped
3 tomatoes chopped
2 tablespoons olive oil
1/2 cup white wine
salt and pepper to taste

Preheat the oven to 355F (180C)
Brush cut sides of eggplant with olive oil and place, cut-side up onto a baking sheet. Roast in preheated oven for 30 minutes, then remove and allow to cool slightly.
Heat a pan over medium temperature. Put in the olive oil, the onion and tomatoes. Mix well and add the wine. Let cook for 20 min. Add salt and pepper. Once the roasted eggplant has cooled enough to handle, scoop out the flesh and add it to the pan. Allow to cook for another 10 min.
Put the mix inside the shell of each eggplant and on top sprinkle with yellow cheese of your choice. Bake in oven at 400F (200C) for 45 min.

Recipe 20-Beef with chilly peppers

Hi there.

Do you like beef? You don't have time to cook?

This recipe takes only 15 min. Really!

Ingredients
450 gr beef cut in cubes
3 chilly peppers chopped (you can use deferent colors)
1 tablespoon olive oil
salt to taste
mix of mustard, ketchup, A1 1/2 cup

Heat a pan over medium heat and put the oil. Add the peppers and beef and stir well. Allow to cook for
10-15 min. Add the sauce. This is it.
You are done!

Recipe 19- Shrimp with rice

Good morning.

Today's dish: Shrimps with rice. Fabulous!

Ingredients
1 kg small FRESH shrimps
3 tomatoes chopped
1 onion chopped
1 chilly pepper chopped
1/2 teaspoon salt
2 tablespoon olive oil
1/4 cup OUZO

Wash the shrimps under water. Bring 2 lit of water to boil in a large pot with salt. Put the shrimps in and boil for 10 min. Take them out and cut out the head and the hard shell. Leave only the body of the shrimps.
In another pot put the olive oil and heat over medium temperature. Add the onion, tomatoes, pepper and shrimps. Cook for 5 min and add 1/4 cup OUZO. Put 3 glasses of water and allow to boil. Then add 1 1/2 cup rice and boil for 25 min. Mix frequently.

This is it! Easy? Yes! Tasty?

Recipe 18- Cheese cookies

Good morning.
I think today i am not in for many things in the kitchen.

Lets try something very very quick but extremely tasty!

Ingredients
250 gr butter
1 1/2 cup PECORINO AMFILOHIAS or another hard and salty cheese shredded
1/2 cup vegetable oil
1 egg
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
4 cups flour

In a cup beat the egg. Take half of it and put it in a large bowl. Mix in all the other ingredients until you have a smooth dough. Take small amounts of dough, give shape of cookie and place all of them on to a baking pan covered with baking paper.
Preheat the oven at 355F ( 180C ).
Brush the cookies with the half egg and bake them for 15 min or until light brown.

Ready?

Recipe 17- Vanilla and chocolate cake

Here is a very easy recipe for the most delicious cake!

Ingredients

1 cup melted butter
1 cup sugar
5 eggs
1 vanilla
1 teaspoon salt
2 cups flour
4 tablespoons cocoa powder
6 tablespoons warm fresh milk

In a large bowl beat the butter with the sugar. Add the eggs and continue beating. Then add the vanilla, salt and flour and mix well. Grease a baking pan and pour inside half of the mix. Mix the milk with the cocoa and add it to the remaining cake mix. Pour this chocolate mix into the baking pan and mix with a spoon until the vanilla and chocolate are evenly diffused.
Preheat the oven at 350F ( 175C ) and bake for 1 hour.

Recipe 16-Greek Bread LAGANA

Today we are making Lagana! Typical bread eaten only on Clean Monday. Yummy!

Ingredients

4 cups flour or whole wheat flour
1/2 cup olive oil
2 teaspoons of dry yeast
1/2 teaspoon salt
1 teaspoon sugar
1 cup warm water

For the topping

some sesame seeds

In a large bowl put the water and the sugar and mix. Then add the yeast and mix well. Add the oil, salt and gradually add the flour. Mix with a wooden spoon at first and then with hands until you have a smooth dough.
It may need a little more warm water.
Form 2 flat loaves round. Place on cooking paper and sprinkle with sesame seeds.
Preheat the oven to 175F ( 80C ) and put the loaves into the oven.
Bake for 25 min WITHOUT opening the oven door.
Then raise the temperature at 315F ( 160C ) and bake for another 35 min.

Happy Valentine's Day with Recipe 15- Penne alla NADINARA

HAPPY VALENTINE'S DAY!

Today we are going to celebrate with the famous Penne alla Nadinara!

Ingredients for the SAUCE

500 ml milk cream fresh
1 onion chopped
1 tablespoon olive oil
1 teaspoon garlic powder
2 tablespoons white wine
100 gr PECORINO AMFILOHIAS shredded
salt pepper to taste


500gr penne

Heat a pot over medium high temperature and put the olive oil. Add the onion and mix until light brown. Put the wine and stir well. Add the milk cream and garlic, salt and pepper and cook over low temperature for 15 min. Put the cheese, turn off the heat and stir well.

Heat a large pot with 2 lit salted water over high temperature and bring it to boil. Put inside the penne and stir well. Boil until al dente ( approximately 8 min ). Turn off the heat, place the penne into a strainer and rinse with cold water. Put a tablespoon of butter in the pot and put back the penne. Mix well and then add the sauce. Stir and serve immediately.

Recipe 14- Salad NADOULEH

Oh, yes.
Today no time for baking.

Only salad. Healthy!

Ingredients

1 bunch fresh parsley chopped
2 tablespoons of fresh mint chopped
1 small onion chopped
3 tomatoes chopped
1/2 cup bulgur
juice of 2 lemons
1/2 cup olive oil
salt/pepper to taste

First soak bulgur in water for 2 hours. Squeeze out excess water from bulgur using hands. Mix all the ingredients in a large bowl and serve immediately.

Recipe 13- Cinnamon Cookies

Hi!
Today we are going to bake cinnamon cookies. Yummy!

Ingredients
1/2 kg flour
1 teaspoon baking soda
2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1 cup sugar
1 cup vegetable oil
2 tablespoons METAXA the greek spirit or another liqueur
1/4 cup orange juice

Put the flour into a big bowl and add the baking soda and powder then put the cinnamon. In another bowl beat the sugar with METAXA and juice. Pour the mix into the flour and mix well.
Preheat the oven at 350F ( 180C ). Prepare the cookies by giving them round shape and place them onto a greased baking pan and bake for 35 min or until light brown.

RECIPE 12- Meatballs soup Giouvarlakia

Todays recipe is a traditional greek dish.

Ingredients

800 gr minced beef
1 onion
2 eggs
2 tablespoons butter
8 glasses of water ( 2 lit )
juice of 2 lemons
1 tablespoon corn flour
1 cup rice
1 cup flour
salt/pepper to taste


Serves 6

Prepare the meatballs using the minced beef ( of course! ), 1 egg, 1/2 cup rice, salt and pepper. Cover each one of them with flour. Heat a large pot over medium high heat, put the butter and when it melts add the onion chopped. Stir well until light brown then add the water. When it starts boiling put the meatballs inside and boil in medium temperature for 30 min. Add 1/2 cup of rice and mix. Boil for another 15 min. Remove from heat. In a bowl mix the lemon juice with the egg. Add one cup of water from the pot gradually and mix well. Put the corn flour in and mix again. Pour the mix SLOWLY into the pot and stir well.

This is it! Quick, easy, delicious and nutritious!

Recipe 11- Crepes the greek way

Hi there!

Today we are making crepes. We will make 10. 5 for breakfast and 5 for dessert after dinner.

Ingredients:

2 cups flour
1 cup fresh milk
1 cup water
1/2 teaspoon salt
1 teaspoon sugar
4 tablespoons melted butter
4 eggs

In a large bowl mix all the ingredients and beat them ideally with a mini mixer until smooth.
Heat a lightly oiled frying pan over medium high heat. Pour 6 tablespoons of the mixture onto the pan. Tilt the pan with a circular motion so that the mixture coats the surface evenly. Cook the crepe for about 2 min and turn with a spatula. Cook for another 2 min. Repeat with the remaining mixture until finished.

For breakfast you can use one slice of gouda cheese for each crepe. Place it in the middle then fold the crepe forming a triangle and put it in the pan again for 1 min. This is to allow the cheese to melt. Serve hot with Ketcup.
For dessert use a scoop of nutella and a butter biscuit crashed for every crepe. Repeat the same as for the cheese.

Recipe 10-greek cheese pie

Today i joined Abu Dhabi Mums! Awesome ! Me and baby met many new friends!


So no time for something difficult.
Quick and easy.

Ingredients
For the dough

750 gr flour
1 cup vegetable oil
1 cup warm fresh milk
1 cup warm water
1 teaspoon dry yeast

For the stuffing

1/2 kg greek Feta cheese

For putting on top before baking

1 egg
1 tablespoon olive oil
sesame seeds


Preheat the oven at 355F ( 180C ). In a large bowl mix all the ingredients. Kneed the dough until smooth.
Cut the cheese into small pieces using your hands. Take half of the dough and place it on a baking pan ( 24X40 ). Stretch it from the center outwards so it covers all the bottom and the sides of the pan. Put the cheese and cover with the other half of the dough. This one has to be stretched out on a floured surface. Mix the egg with the oil and using a baking brush put it on top of the dough and sprinkle the sesame seeds. Put it in the oven and bake for 45 min.

There you go!

Recipe 9-Nadine's ice cream

Today i made ice cream, vanilla flavor.

It is a great match with the brownie Nadownie!

You will need to have a plastic box suitable for the freezer 4Lit. Be care full with the plastic boxes you use for the food. Always check the triangle sign with the number in it. Choose number 1, 2, 5. Not 6 or 7, they may be harm full to your health because they contain BPA.

Ingredients:
250 ml fresh cream milk
400 gr sweetened condensed milk
200 gr condensed milk
1 teaspoon vanilla extract

Put them all in the plastic box and combine with a mixer for 5 min. Place the box in the freezer for 30 min. Take it out and mix the ice cream again. Place it in the freezer for another 30 min. Take it out again and mix. Repeat the same one more time and then let the ice cream in the freezer for at least 3 hours. You will have the smoothest and most tasty ice cream!

You can serve it in a bowl with a piece of brownie or mix it with chocolate chips and chocolate fudge. You can even mix it with a chocolate or cereal bar of your choice chopped in small pieces.

Recipe 8- Lentil Soup

Good morning!

I just cooked my fabulous lentil soup.
Here is what you need for it.

1/2 kg lentils
1 onion
1 cup olive oil
500 ml tomato sauce
100 ml tomato paste
2 tablespoons white wine
1 bay leaf
salt/pepper to taste

Heat a large pot with 1.5lit water until it starts boiling. Put the lentils inside , stir and boil for 30 min. Throw away the water and keep the lentils!
 Heat again the large pot over medium temperature with 1/2 cup of the oil and mix in the onion, the lentils and the wine. Add the tomato paste, the tomato sauce, the rest of the oil, bay leaf and water according to your taste. Bring them to boil and lower the temperature to sim and let them cook for 2 hours.
Delicious and nutritious !

Recipe 7-Just for kids!

Good morning!

Today i am going to prepare a very easy to make cake. So this is perfect for young chefs!

Coconut cake

1 cup flour
1 teaspoon baking powder
1 cup sugar
1 cup coconut powder
3/4 cup fresh milk

In a bowl mix all the ingredients. Preheat the oven at 350F ( 180C ). Put the mix in a bake pot 18x26 and place it in the oven. Bake for 30 min. The cake is ready!

Yesterday's dinner



Yesterday i cooked beef stew similar to Beef Bourguignon. I hope everyone enjoyed..

So here is the recipe


Nadine's Spicy Beef stew with vegetables -Recipe 6

Serves 4

800 gr beef cut in cubes
2 carrots
3 onions
4 slices of bacon
1 can whole mushrooms
1 cup of water
1 cup red wine
1 cup olive oil
salt/pepper according to taste

I used chilly pepper!

In a big pot put 1/2 cup of oil and heat. Add the onions, bacon, mushrooms, carrots and mix. Then add the beef. Mix well and cook in medium for 10 min, then add the water, 1/2 cup oil and wine bring it to boil and afterwards low the temperature to sim and allow to cook slowly for 3 hours. Check regularly because it may need some more water. Just before you serve add the salt and pepper or chilly for extra taste.

Recipe 5

Chocolate Cake Nadownies

6 tablespoons unsweetened cocoa powder
1/4 cup butter
1 teaspoon vanilla powder
1/4 teaspoon salt
1 cup sugar
2 eggs
1/3 cup white flour
2 tablespoons METAXA the greek spirit or another liqueur
1/2 cup hazelnuts

Preheat the oven at 325F ( 160C ). In a bowl put the butter and melt it in the microwave. Add the cocoa powder. Mix well and add all other ingredients. In the end put the hazelnuts. In a bake pan 18x26 put 1 tablespoon of vegetable oil and 1 tablespoon of cocoa powder and cover the bottom and sides of the pan. Put inside your mix and place it in the oven. Bake for 40 min.

Yummy! You can serve hot or let it cool.

Recipe 4

Nadine's Bread

5cups whole meal flour
1/4 vegetable oil
1 1/2 cups warm water
2 teaspoons dry yeast
1 teaspoon salt
2 teaspoons sugar


Put the warm water into a large bowl and add the sugar. Put the yeast and stir well. Add the salt and and flour gradually. Put also the oil and start kneading the dough until you have a smooth ball. Roll it with your hands and give the shape of a loaf. Put it in an oven pan ( rhe one you use for bread or cake ).
Preheat the oven at 175F ( 80C ). Place the pan inside the oven for 70 min. Do Not open the oven during that time! Then raise the temperature to 300F ( 150C ) and bake for another 1 hour.

There you go! Your bread is ready!

Recipe 3- Pizza Nadinizza


Pizza Nadinizza
Serves 4

For the dough

1 cup warm water
3 1/2 cups flour
2 tablespoons vegetable oil
2 teaspoons honey
1 teaspoon salt
1 teaspoon dry yeast

Put the warm water into a bowl and add the honey. Stir well and put in the yeast. Stir until it is dissolved. Add the salt and gradually add the flour and oil and start kneading with your hands until you have a smooth ball. Cover the bowl with plastic wrap and let it sit for 1 hour at room temperature. Then push it down again so it deflates. Let it sit for about 1 hour. Put the dough in a lightly floured surface , put a bit of flour on top and make it into a shape of a pie by stretching it out from the center outwards. You can use a rolling pin. Place the dough on to an oven pan or pizza stone 36 cm. Punch some holes with a fork.

Preheat the oven at 425F ( 220C ).

For the pizza sauce
400 gr tomato sauce
1 teaspoon garlic salt/pepper
1 tablespoon oregano

Put the sauce on top of the dough. Then put 2 cups of shredded yellow cheese of you choice or mozzarella. On the top put slices of tomato and pepperoni.

Bake for 25 min.
There you go! You have your pizza nadinizza!

Recipe 2
Kiss Nadine

This is a tart with mushrooms and onions.
Serves 4

For the tart
2 cups flour
1 teaspoon salt/pepper
2 eggs
3 tablespoons olive oil

Mix the ingredients into a dough. Knead the dough until you have a smooth ball. Cover with plastic wrap and put it in the fridge for at least 30 min.
Then put the dough on a lightly floured surface and make it a shape of a pie by stretching it out from the center outwards. Put it in an oven pan 24cm and punch some holes in the dough with a fork.
Preheat the oven at 300F ( 150 C ) and bake for 10 min.

For the stuffing
250ml milk cream
2 eggs
2 tablespoons butter
1 can whole mushrooms
1 big onion

Beat the eggs and cream milk.
In a pan heat the butter and stir in the mushrooms and chopped onion until light brown
( about 10 min ).
If you want you can add 2 tablespoons of white wine.
Take the tart out of the oven and pour in the creamy mixture and on top put the mushrooms and onion.
Bake for another 30 min.

Your Kiss Nadine is ready!

Day 1

Semolina dessert ( Greek Halva )

this recipe serves 4

2 cups semolina
1/2 cup vegetable oil
2 cups water
1 1/2 cup sugar
cinnamon to taste

first bring the water sugar cinnamon to boil and let boil for 5-10 min
in another pan heat in medium the oil and semolina until it gets golden ( this will take about 10 min )
add the water with sugar that you boiled and stir well until the mixture gets non sticky ( this will take about 5 min )

there you are !
you have your first greek desert!
